Which fabric or method to use for a wall hanging

I want to make a wall hanging or table covering for the Episcopal Center at the University of Georgia, which would include a design with an Episcopal Shield, some writing, and another fairly simple logo.

Is that something that I have to quilt together from fabric then add embroidered stiching for the words or could all of that be done on one of these embroidery fabrics? If so, which embroidery fabric?

I'm thinking more of hanging, like a tapestry or a table drape, as opposed to a framed piece.

Any suggestions?

I'm new at this but I have two years to finish.
