What stitch do I use for the dragon

Hi, I'm new to blackwork and I'm about to start the Blackwotk Oriental Dragan pattern of your sister site X-Calibre but I can't figure out what stch is called for in one area. It's the dragon head and seems to be completely filled in - what stch is used for this. I've only done cross stitch before and feel a little lost,

I am sorry for any confusion, Gemma. The dragon's head is worked in cross stitch, in either red or gold, depending on the symbol as shown in the key.
