How to know the softness or stiffness of different linen types when buying on-line

Does anyone know of a resource that describes the softness or stiffness of the different types of linen?

I prefer a linen that is not so stiff. I have done quite a few projects but I cannot remember the names of the linen that I prefer.

The needlework store in our area closed so I do not have a place to go to that is close by to touch and feel the fabric. I really miss that...Thanks for any help.
