Hardanger on 25 count evenweave linen

I am new to hardanger and would like to use 25 count evenweave linen, my question is do I count each thread as 1 or do I count 2 threads as 1 as I would in cross stitch. Also can you please tell me what size pearl thread I would use on this fabric count?

Yes, you would count each thread when working hardanger.
Be sure to check how the chart has been created before you start stitching, Judy. Some designers try to keep the chart small, by only drawing the kloster block stitches over 2 squares on the chart, instead of the 4 that you would stitch them over. As long as you are aware of this before you start then you will be fine.
I create my own hardanger designs by having each line on the chart represent one fabric thread. It is then easy to see how long to make each stitch.
For a 25 count fabric I would suggest pearl cottons 5 (thickest) and 8 (thinnest) for your embroidery, unless you are looking for a daintier effect. If so, then you could use 8 for the kloster blocks and satin stitch motifs and a thinner size 12 for the needle weaving, square filets or doves eyes.
