Could you please tell me what count needlepoint canvas I would need (not waste canvas)? My pattern is 240 stitches x 157 stitches and I want to stitch it in two strands of embroidery floss.

That depends entirely on how large you want the finished piece to be. Dive the stitch count by different canvas counts to see how many inches it will come out. 100 stitches done on 10 count is 10 inches, but if you worked 100 stitches on 20 count, it would only 5 inches when done.
