I am trying to start my first quilt and I am lost!!!
I would like to know what type of stitch or embroidery should be used when you have a shape that you simply need to put on the quilting square, can you help me please?

It sounds like you are talking about applique, Sam. Here shapes are attached to the background quilt block with tiny, almost invisible stitches that pick up a minute amount of the "patch" and then a tiny bit of background fabric. The raw edges are tucked in as you go.
There is also another kind of patchwork where pieces of irregular shaped fabrics are added and embroidery stitches are worked over the edges. This is know as crazy quilting, and can be quite elaborate.
